Egg Bites

With 2 toddlers at home and busy with work I have been looking for easy and healthy options for breakfast or lunch. Egg bites have been a revolution for me! They are very easy to make and everyone loves them. There are so many variations.

Here is my favorite recipe:

  • 6 eggs
  • 2 tbsp of greek yogurt
  • 1 tbsp of goat cheese
  • 1 tbsp of roasted bell peppers
  • 1 tbsp of shredded cheese
  • Dry Basil or Italian herbs
  • 1 tsp of olive oil
  • Salt and pepper

You can also complement the eggs with eggs white. Mix all the ingredients. I always use my blender as it is so easy then pour the mix into my Nonstick 12-Cup Silicone Muffin Pan.  Bake for 40 min at 280 ˚F. Enjoy!!
