In the evening, I am all about a low carb meal! I love food and living in California I love Enchiladas. Like any mom, I am always too busy and it feels that I never have enough time. I need easy and quick recipe! This recipe is fun and you can switch the vegetables to create your own.
Here is my low carb enchiladas recipe:
- 1 lb of chicken breasts
- 2 cups of frozen or fresh bell peppers
- 1 cup of shredded cheese
- 1 avocado
- 1 lettuce
- 1 can of mild red enchilada sauce (10 oz)
- 1/2 cup of fresh cilantro
- Sour cream
- 1 tsp of olive oil
- Salt and pepper (optional)
Place the chicken breasts with some olive oil, salt and pepper in a dish with the bell peppers over it. Cook for 20 min at 350˚F. Take the cooked chicken out and add the shredded cheese all over. Cook it for another 30 min.
Cut the lettuce, the avocado and the cilantro. Put as much lettuce as desire in the plate. When the chicken is done, plate it over the lettuce. Add the cilantro and the avocado. Finally add some sour cream. Bon appétit!!
