Winter is here! The cold weather had me craving some delicious butternut squash. With my busy schedule easy recipes are my go to! I enjoy eating this roasted butternut squash dish as is but it is also a great side dish!!
Here is the recipe:
- 1 large Butternut Squash
- 3-4 tbsp of Olive oil
- Seasoning Herbs
Preheat the oven to 400˚F. Peel and cut the butternut squash in 2. Remove the seeds and cut the squash in 1″ dices. Place the diced squash in a dish with olive oil, salt, pepper, herbs and nutmeg. Toss with your hands. Place the squash in a sheet pan. Roast for 30 to 40 minutes until tender. Flip the squash once during the cooking so the squash cubes brown evenly.
