Carb Free Cauliflower Rice

My family and I have been looking into eating less carbs and more vegetables. A great alternative to rice is cauliflower rice. This is one new recipe I am pretty excited about!! My husband and I actually started eating in too!!! You can add more veggies to it such as carrots, peas, mushrooms, broccoli and some delicious chicken or scramble eggs!

Here is the recipe:

  • 1 large Cauliflower
  • 3 tbsp Olive oil
  • 1/2 Onion
  • fresh Parsley
  • 1/2 Lemon juice
  • Salt
  • Pepper

Trim the cauliflower in 1 inch florets. Grind the florets with a mixer until the mixture resembles rice. In a large pan cook the onions in the olive oil until they are golden brown. Add the cauliflower and stir. Add some salt, pepper and fresh parsley as desired. Continue to cook while stirring for about 5 minutes until the cauliflower has softened. Pour the cauliflower into a serving dish and add some lemon juice. Your cauliflower rice is ready to be enjoyed.
